How To Bake the Perfect Healthy Coffee Cake
Our healthy version of coffee cake is surprisingly straightforward! First, prepare the cinnamon filling and streusel crumble topping by combining sugar, cinnamon, and salt in a small bowl, before stirring it thoroughly into another container. Add light butter and use a fork to break it up into coarse, pebby crumbs. Set this aside. In a separate large mixing bowl, whisk all of the dry ingredients: flours, 3/4 cup brown sugar, baking powder and baking soda together until evenly mixed. Stir together egg whites, vanilla extract and melted coconut oil in another bowl until well mixed. Combine both batters, and pour half into a greased 9×13-inch baking pan; spread evenly. Then sprinkle cinnamon sugar mixture and the streusel topping over it all, followed by spoonfuls of remaining batter that you will drop onto top and spread carefully by spreading spoon. Bake until it puffs up when poked with a toothpick inserted in its center comes out clean.
Leave to cool before cutting and serving with milk, cold coffee or hot tea! This coffee cake can keep at room temperature for two days in an airtight container; or freeze slices individually by wrapping tightly in plastic and foil when ready.
