Mushrooms are becoming a rising trend, from wild porcinis and chanterelles foraging trips to psychedelic-inducing psilocybin, but one fungus stands to revolutionise our morning coffee ritual: adaptogenic mushrooms.

Jody Hall, founder of Cupcake Royale and cannabis edible company The Goodship, hopes to capitalize on this trend through Wunderground Coffee. Her mushroom-infused blends, such as immunity-enhancing Hocus Pocus and focus-inducing Brainchild, were released for sale in June.

Adaptogenic Mushrooms

Adaptogenic mushrooms such as Reishi, Lion’s Mane and Cordyceps have long been used as immune boosters in eastern medicine. They’re believed to increase energy, ease stress relief, brighten moods and spark deep thoughts – as well as help combating effects of aging while improving heart health and combating inflammation.

Mushrooms are an abundant natural source of antioxidants and contain B-complex vitamins, zinc, potassium and selenium – not to mention an array of other important vitamins and minerals like B12, K and Se. Furthermore, mushrooms contain an abundance of ergosterol, polysaccharides and triterpenoids which have been linked with lower cholesterol levels, lower blood pressure, decreased cancer risks and enhanced brain functioning.

Based on research conducted, mushroom-infused coffee may help significantly decrease stress and enhance cognitive function. This is because mushrooms increase oxygen flow to the brain, helping decrease anxiety and elevate mood while simultaneously lowering cortisol levels (a major stress-inducing hormone).

Seattle-Tacoma International Airport travelers will soon have the opportunity to experience mushroom coffee thanks to Wunderground. Capitol Hill cupcake and pot cookie entrepreneur Jody Hall has transformed E Pike Cupcake Royale in Seattle-Tacoma International Airport into the flagship showcase for her new company that serves blends with ground adaptogenic mushrooms such as lion’s mane, chaga, reishi, cordyceps. Featured alongside these coffee beverages will be grain bowls, broths and pastries by chef Alysssa Lisle; opening date set for Halloween!
