How to Do It

Preparing for our tea ceremony required purchasing Japanese tea utensils and moving furniture out of the way so guests would have ample seating space. Involving non-participating family members was key as they assisted with setting up and washing off cups after each serving.
Tea ceremonies are generally led by a tea master who has been trained in both tea making and etiquette. He or she then serves the guests tea in an ordered fashion using beautiful yet functional utensils; often with the guest of honor sitting closest to the tea master receiving first cup from tea master and bride-to-be receiving theirs as part of traditional Chinese honorifics.
After each cup of tea, the couple receives well wishes and gifts from their guests – whether this means simply giving cards or jewelry or something more elaborate such as a cheongsam for bride. As per customary, bride and groom typically give red envelopes of money or cash (known as lai see) back out after each tea ceremony as thank-yous to thank loved ones for their thoughtful wishes and to show their gratitude.

Mushroom tea is typically presented during a Japanese style tea ceremony, which requires knowledge of Japanese etiquette. It provides an idyllic and peaceful experience, featuring different utensils used for preparation and serving the tea; additional touches like flower arrangements and scrolls may add further beauty.
The host will begin by cleaning and purifying both roji lu di and tokonoma chuang no jaan, as well as washing all other necessary items such as the chakin cha jin, chasen cha xian, chashaku cha shao and kensui chian shui (discard water container) along with setting up their tea table using green bamboo futaoki gai zhi (lid rest). All necessary equipment should be ready before guests begin their tea ceremony experience.
Once the chawan is full of tea, its host will begin making matcha. Once seated on a tatami mat and saying, “Osaki ni,” to indicate their readiness to accept tea. They then pick up and place it before them in a gesture of respect for this precious object.
The host will then use a tea scoop and place it on a chaire. They will remove and fold chashaku before placing them on mizusashi – a caddy holding tea – before pouring tea into each guest cup for enjoyment and relaxation. As thin tea portion approaches its conclusion, guests often laugh and relax more, knowing that ceremony has come close to an end.
Steeping
